Preparation

    1. First, you have to wash the gutted fish thoroughly and dab it with a kitchen towel. Then halve the lemon, squeeze the juice from one half and cut the other half into slices. Peel the garlic cloves and halve them. Finely chop the fresh herbs.
    2. Season the inside of the fish with salt, chilli and pepper. Fill the belly pocket with the herbs and drizzle with a few drops of olive oil and lemon juice.
    3. Cover the fish with the lemon slices on both sides and wrap them with string. Grill on both sides at medium heat for about 8-10 minutes. Remove the lemon slices before serving.
